Day 2- Not bad so far!

Hey everyone! I woke up this morning deciding to make another entire Paleo breakfast and learned a few hard lessons.

Lesson 1. I really didn't think Paleo would be expensive to do, and it isn't in the long run, but a lot of the new ingredients I needed were "exotic" to me. The only place I could find them were at an organic store and we all know how expensive that can be. Once I have the ingredients I'm good to go and don't need to buy them all the time! Still cheaper than going on any other diet!

Lesson 2. Making Paleo pancakes still isn't very Paleo. There really shouldn't be any of that stuff, but its important to have some sort of cheat (even a Paleo cheat) to be successful. By the way, the pancakes were amazing!

Lesson 3. When you first start cooking this way NOTHING looks pretty. Forget those perfect magazine or food network shots, it'll look like a mess.

So for my breakfast this morning I made Paleo pancakes, toad in a hole (avocado slices cooked with egg in the middle), with fruit and of course BACON!!! If anyone wants the recipes let me know! Good luck!
